Moroccan Cous Cous

Another simple recipe! Cous cous with various vegetables, chickpeas, tomatos and sultanas. Don't worry too much about the quantites of each vegetable, just use what you've got!

Serves 4

2 Onions, chopped

1 Large Courgette, chopped

2 Carrots, chopped

1 Can of Chickpeas

A Few Handfulls of Sultanas

2 Tins/Cartons of Chopped Tomatos

A Few Cloves of Garlic, finely chopped

200g Cous Cous (or about 50g per person)

Add spices to taste! We used:

1tsp Cumin
1tsp Paprika
1tsp Turmeric
1 tsp Cayenne Pepper
Salt and Pepper

Some other Veg you could add:

Aubergine
Peppers
Potatos, cooked
Peas
Squash
 

Method

1.  Boil the kettle and pour into the cous cous. If you're adding some spices you can put some in now to flavour the cous cosu while it cooks. While waiting for the cous cous to cook make sure you cover it with a plate or a few tea towels.

2. Chop the veg and fry with a bit of oil.

3. Once the veg is soft mix it with the cous cous, chopped tomatos, saltanas and chickpeas in a big pot and cook it for about 10-15 minues, until its hot and the chick peas are cooked. Make sure nothing sticks to the bottom!

4. Once everything is hot, it's ready to serve!
